Food Manager Sanitation (ServSafe®) Certification
This course is designed to educate managers and employees in the food service industry on proper food safety procedures and fulfills the requirements of the Wisconsin Food Code. The National Restaurant Association certification examination is a com
ponent of the course. By taking this state-approved course, and passing the certification examination, you'll be eligible to apply for your Certified Food Manager License from the Department of Health and Social Services. Students must purchase a textbook and complete study assignments prior to the class session.
Prior to the class date, students must read the required textbook: ServSafe Coursebook, 6th ed., 2012, published by the National Restaurant Association, 460 pg. ISBN: 0133075834. Books may be purchased at both the Rhinelander and Lakeland Center locations. To ensure ample time to prepare for the class you are attending, please enroll at least 10 working days prior to your class date. Upon registration, students will receive a detailed letter with assignments and other pertinent class information.
Food Manager Recertification
An update of changes in the codes and regulations related to food safety and sanitation will be provided in this course. Procedures for food preparation, sanitary work habits, cleaning and sanitizing procedures, and HACCP principles will be covered. This course meets the requirements of the Wisconsin Food Code for food manager sanitation recertification.
Responsible Beverage Service
This 4-hour course provides you with the necessary knowledge and techniques you need to be a responsible seller of alcohol. Specifically, you will learn how to protect yourself and your establishment from liability; how alcohol affects your customers; how to recognize the effects of alcohol on your customers; how to prevent customers from becoming intoxicated; how to intervene when you need to refuse a sale to someone; how to prevent and deal with disturbances; how to accurately check IDs and recognize minors; how to prevent second-party sales; and how to refuse a sale.
